Our Assistant Winemaker Christiane Schleussner and a team of researchers from Cork Supply USA pioneered the use of the "dry soak" method in the United States. The "dry soak" method is a specialized way of testing corks for cork taint. Their work was such a breakthough that they published a paper about it in the Journal of Agricultural and Food Chemistry. Our strict cork quality protocols give us one of the lowest cork taint rates in the wine industry.
